I like easy. Easy dinners. Easy snacks. Easy breakfasts! With two kids, a thriving freelance writer/editor business, and the explosion of my health & fitness coaching business in this last year, I really rely on quick, easy, but healthy meals for me and my family. So when I came across this recipe by Autumn Calabrese, creator of the Ultimate Portion Fix nutrition plan, which launches March 18th, I knew had to try these overnight oats! These overnight oats are sweet, filling, and so dang healthy! With each portion, you get a serving of fruit, carbs, and protein. It’s truly jam-packed with ingredients that have low glycemic indexes, lots of protein, and are gluten free. In other words: it packs a major nutrient-rich punch first thing in the morning!
And even though overnight oats are generally saved for breakfast, I have to say: this one tastes like a dessert so sometimes I have it after dinner as a sweet treat! Give it a try and let me know what you think!
Makes 1 serving
- 1/4 cup steel cut oatmeal *I also used rolled oats for this and it was great both ways!
- 1/2 cup unsweetened almond/coconut milk
- 1/2 cup plain Greek yogurt
- vanilla- splash
- apple pie spice- to taste *I used pumpkin pie spice
- 1 small apple- chopped
Mix all of the ingredients together in a bowl, cover and put in the fridge overnight. And it’s ready to eat in the morning! I added one packet of Stevia to my mix and also topped with a teeny bit of honey :).
