I love fall. I’m totally that person, who, at the first sign of a crisp evening (or morning), wants to cook everything pumpkin and go pick pumpkins and apples. I just love everything about fall. So when I found out the apple orchards in North Carolina were open already and it’s one of the best harvests they’ve seen in years, I had to go apple picking! So this past weekend–in August, mind you–me and my hubs and two littles headed up to the NC mountains for some apple picking. And came home with a 1/2 bushel of Galas, Arlets, and Honeycrisps! And they are SO delicious!

So I decided to didn’t want to just bake up pie after cobble after muffin with the apples. I mean, we gotta be a little bit healthy here, right? So I whipped up this amazing Apple Pie Smoothie, which also just so happens to be 21 Day Fix approved, and I have to say, I was blown away! Even my two kiddos–ages 2 and 5, for the record–LOVED this smoothie! Not only is it filling, but it’s chock full of super healthy ingredients such as rolled oats, apples, walnuts, cinnamon, and nutmeg!

The bonus is that you can easily prep several bags at once, see below, and then freeze. Then when you’re ready to make it in the morning or for a snack or whenever, you just add unsweetened vanilla almond milk and voila! A super-healthy breakfast is served for you and your kids!

Serves 1

INGREDIENTS

  • 1 red apple with skin, sliced
  • 1 Tbsp. fresh lemon juice
  • 1/2 cup rolled oats
  • 2 Tbsp. chopped walnuts
  • 1 lemon slice (with peel, seeds removed)
  • 1/2 tsp. pure vanilla extract
  • big pinch of cinnamon
  • big pinch of nutmeg
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp. honey or pure maple syrup *optional
  • 1-2 cubes ice *optional

DIRECTIONS

Blend all ingredients until smooth.
