When fall hits, I LOVE to bake. Give me a really awesome pumpkin bread, banana muffin, apple pie oatmeal, etc. recipe, and I will make that bad boy A LOT. (Check out my Maple Pumpkin Muffins and Slow Cooker Pumpkin Pie Oatmeal recipes for proof. I love me some fall-themed flavors.) Which leads me to this 21 Day Fix-approved Banana Apple Muffin recipe courtesy of 21 Day Fix creator, Autumn Calabrese. Not only does it satisfy the banana bread lover in me, it’s also 1) insanely easy and quick to make 2) super kid friendly and, finally, 3) CARB FREE. YES! These muffins contain NO CARBS! How’s that for some clean eating amazing-ness for you?

My two year old and five year old absolutely DEVOURED these muffins as after-school snacks. And when I’m in a hurry and need something fast or I want to have it as a side next to my super nutritious Shakeology, these muffins are perfect! Like, so perfect it’s hard to keep myself from eating the whole batch of them!

The beauty, of course, is not just that they’re really tasty. (They literally taste JUST like banana bread sans all the fat and calories.) They’re also carb free, which for anyone following 21 Day Fix, following a low-sugar or low-carbohydrate diet, following a pre-diabetic or diabetic diet, etc., is SO key!! And for me, I;m in the lowest bracket of 21 Day Fix so I value my carbs BIG TIME! (Side note: it wasn’t until I got my macros–carbs to proteins to fats–in order via 21 Day Fix that I FINALLY saw results as in ABS after TWO babies! Want to know more about how I did it? Serves 8-9 regular-size muffins

  • 1 1/2 cups almond flour
  • 1/8 tsp. salt
  • 3/4 tsp. baking soda
  • 1 Tbsp. melted butter, cooled
  • 2 large eggs
  • 1 cup mashed bananas (about 2)
  • 1/2 cup chopped apple (I love honey crisp this time of year, chop into small pieces)
  • 1-2 tsp. honey

NOTE: I actually used 1 cup of almond flour and a 1/2 cup of flaxseed meal, you could do it either way.


  1. Preheat oven to 350.
  2. Combine the almond flour, salt and baking soda.
  3. In a medium bowl, whisk together the butter and eggs and then stir into the dry ingredients.
  4. Stir in the bananas and fold in the apple.
  5. Spoon batter into muffin cups (makes about 8-9) and bake for 30-40 minutes.
