One of the biggest challenges I think a lot of parents face is getting enough fruits and veggies into their kids. I mean, when I was a kid I would stick my nose up at veggies, too. Which is exactly why cookbooks like Jessica Seinfeld‘s detailing how to “sneak” veggies and fruits into your main meals without your kids sniffing them out became a New York Times best seller. (Side note: this parenting thing is hard, y’all!)
So luckily, I honed in on what my little people like in order to “sneak” in those fruits and proteins: popsicles. These delish pops get my kids a serving of non-fat plain Greek yogurt–an excellent source of clean protein–plus a 1/2 serving of fruit. There are no artificial sweeteners or white sugar–just natural raw honey to help sweeten the popsicles a little. And the best part is that I like them, too! Ok, scratch that, I LOVE these things!
My kids feel like they’re getting a dessert, I feel like a decent mom for not letting them eat Oreo cookies, and I get to indulge, too. I mean, why wouldn’t you want to make these? 🙂
Without further ado, here’s the recipe, below, along with the 21 Day Fix container breakdown for those of you following this majorly awesome lifestyle eating plan! - 2 1/2 cups strawberries, hulled & chopped *I added some raspberries, too
- 1 1/2 cups Greek yogurt
- 1/4 cup honey
- 1 tablespoon fresh lemon juice
- Combine all ingredients in a blender, and process until smooth.
- Divide the mixture between popsicle molds. Place the molds in the freezer for at least 4 hours, until the popsicles are completely frozen.
- To remove the popsicles, run the molds under hot water for a few seconds.

1/2 red, 1/2 fruit, 2 tsp.
